Pour the boiling milk over the chocolate, taking care to remove the vanilla pod and star anise. Let it sit for 10 minutes.
In the meantime, whip the 35% cream into a firm whipped cream. Reserve in the refrigerator.
Whip the egg whites until stiff, beating them with sugar.
Whip the chocolate mixture by hand until it reaches a temperature of 95 F (35 C).
Fold in the whipped cream, then the egg whites.
Separate the preparation into 6 glasses or cups, then sprinkle with chopped hazelnuts.
Refrigerate for at least 2 hours before serving.
