1. Place the meringues in a clean kitchen towel. Close the towel over the meringues. Holding the towel firmly around the meringues, using a rolling pin, crush the meringues into large crumbs.
2. Pour the english cream into a bowl. Add the raspberries. Crush the raspberries roughly, using a fork, into the english cream.
3. Add the cognac and mix well.
4. In 4 glasses or dessert bowls, pour a little flavored english cream. Add a few pieces and crumbs of meringue. Pour a little more flavored english cream, then more pieces of meringue.
5. Finish by adding a little grated chocolate on top.
6. Serve immediately.
