1. Preheat the oven to 375°F.

2. Slice the duck breasts in half lengthwise. Cut each piece of breast into 3 cubes (total 12 cubes for 2 breasts). Be careful to keep the layer of fat on the breasts.

3. In a large bowl, mix the shrimp, onion quarters, and duck cubes. Set aside.

4. In a saucepan, over medium heat, melt the duck fat. Add the onions and cook for 1 minute. Add the ginger. Press the garlic cloves directly into the pan. Mix.

5. Add the white wine and, over high heat, let evaporate for 30 seconds. Add the soy sauce and maple syrup. Heat for 2 minutes. Remove from heat and pour into the bowl, over the shrimp and duck pieces. Mix and set aside for 20 minutes.

6. On wooden skewers, place a duck cube, an onion piece, a shrimp, a duck cube, an onion piece, a shrimp, and finish with a duck piece. Assemble the 4 skewers in the same way.

7. Place the skewers on a baking sheet and bake for about 10 minutes.

8. Remove from the oven and serve with lime wedges and white rice.
