Preparation
1. In a pot of boiling salted water, cook the endives for 5 minutes. Drain.
2. Preheat the oven to 350°F.
3. In a gratin dish, pour 1/2 cup of bechamel sauce. Sprinkle with nutmeg.
4. Lay the slices of ham on a cutting board. Place a cooked endive on each slice. Roll the ham around the endives.
5. Place the rolled endives in the gratin dish. Season with salt and pepper. Pour the remaining bechamel sauce over the endives. Sprinkle with grated Gruyère cheese.
6. Bake for about 20 minutes. Serve very hot.
Note: “Chicon” is the name Belgians give to endives.
