1. Preheat the oven to 180C/350°F.
2. Using a flat beater, mix eggs and sugar until the mixture is frothy. Add flour and mix in small strokes to give a sandy texture. Add cold butter and mix quickly; do not overmix. Let the dough cool for 20 minutes in the refrigerator.
3. Roll out the dough on a floured surface using a pastry roller. Cut out biscuits with a cookie cutter.
4. Place on a baking sheet lined with parchment paper.
5. Bake for 12 minutes.
6. Remove from the oven and let cool completely.
7. For the glaze, in a bowl, mix cream cheese, almond extract, and icing sugar.
8. Top the biscuits with this mixture.
9. Decorate with dried fruits and nuts, and serve.
