1. Preheat the oven to 350°F/180°C.
2. Place the fish on a baking sheet and brush it with oil. Season with salt and pepper.
3. Bake for about ten minutes until the fish is cooked through. Let it cool before crumbling it.
4. Transfer the fish to a bowl and add the fennel brunoise. Mix.
5. Lay out a sheet of puff pastry on the work surface.
6. Brush the entire surface with a brush. Superimpose a 2nd sheet. Brush again.
7. Fold in half lengthwise. Brush again.
8. Place an 80g portion of the fish mixture in the center, fold the edges, and fold into thirds.
9. Perform the same operation for the rest of the ingredients.
10. Bake on a baking sheet for 15 minutes.
