1. Rinse and dry the aubergines. Slice into rounds about 5 mm thick.

2. In a non-stick pan, brown the aubergines for 1 minute on each side in hot oil. Season with salt and pepper while cooking. Drain the aubergines on paper towels.

3. Preheat the oven to 400°F.

4. Line the mold with a sheet of buttered parchment paper. Cover with flaky pastry and prick the bottom with a fork.

5. Brush the bottom of the tart with mustard. Arrange the cheese in thin slices on the bottom of the tart; season the cheese with pepper.

6. Arrange the aubergine slices, overlapping them.

7. Sprinkle with thyme leaves and pine nuts.

8. Bake for 25 minutes.

9. Remove from the oven and serve the flaky aubergine tart immediately.
