Soak the gelatin sheets in cold water.
Once softened, drain and set aside in a bowl.
Prepare a 5 x 8.5 inch (12.5cm x 21cm) rectangular mold by lining it with plastic wrap, leaving some overhang on each side.
In the culinary robot bowl, combine the fresh goat cheese, 35% cream, lemon juice and zest, olive oil, and orange blossom water. Mix until smooth.
Season with salt and pepper, then add the gelatin, which has been melted in the microwave for a few seconds.
Pour the mixture into the prepared mold and cover with plastic wrap.
Refrigerate for at least 8 hours.
Using a knife dipped in hot water, cut the mixture into 2cm cubes, then coat in pistachio powder and top with a whole pistachio.
