In a large bowl, combine the milk, oil, zest, and garlic.
Add the squid and let marinate in the refrigerator for 1 to 2 hours.
In a bowl, combine the flour, smoked paprika, oregano, cayenne pepper, and garlic powder.
Set aside.
Preheat the fryer to 350 F (180 C).
Remove the squid from the marinade, drain a little and pat dry.
Roll the squid in the flour mixture with paprika to cover each ring with a nice crust.
Plunge the squid into the fryer and fry for 2 minutes, until the crust is golden brown.
Drain on paper towels.
Serve with chipotle mayo
Chipotle Mayo:
In a bowl, mix all the ingredients together. Set aside in the refrigerator until serving.
