1. In a food processor, finely chop the coriander and chives. Add the avocado flesh, lime zest and juice. Season with salt and pepper. Mix until smooth.

2. Pour the guacamole into a stainless steel or silicone mold. Transfer to the freezer for at least 5 hours.

3. Unmold the guacamole onto plates.

4. Place some quinoa on top.

5. Cut the persimmon into 4 pieces. Place one piece on each plate.

6. Garnish with fresh herbs and serve with country bread or corn chips.
