Preparation

1. Put warm water in a small bowl, sprinkle yeast and 1 t. of sugar, then mix. Set aside for about 5 minutes, until frothy. Mix the rest of the sugar, flour, and salt in a bowl. Mix oil, vanilla, and yeast mixture until smooth.

2. Place dough on a lightly floured surface and knead until smooth and elastic, about 10 minutes. Put dough in a bowl sprayed with non-stick spray and cover with a towel. Let it rise in a warm place until it has doubled in size, about 45 minutes.

3. Punch down dough and place it on a floured surface. Knead for 2 minutes, then put it back in the bowl. Let it rest for 20 minutes.

4. Preheat oven to 400°F. Roll out dough into a 12-inch circle and place it on a non-stick pizza pan. Spread strawberry jam evenly over the dough, leaving a 1/2-inch border. Sprinkle mozzarella cheese evenly over the jam.

5. Bake for 5 minutes. Remove from oven and arrange chopped fruit on top. Return to oven and bake until crust is golden brown, about 5 more minutes.

6. Let cool slightly before cutting into 8 wedges.
