1. Zest 2 oranges. Remove the white skin that remains on the oranges to peel them alive. Cut the oranges into quarters.
2. Peel, core and cut into quarters the apples and pears. Reserve the fruits in a large bowl.
3. In a large thick-bottomed saucepan, heat the wine and sugar, vanilla sugar, half of the orange zest, four spices and lemon juice; cook over low heat for 5 minutes.
4. Add the prunes and figs. Cook for 20 minutes.
5. Add the apples and pears. Cook for 5 minutes.
6. Add the orange quarters and cook for 3 minutes.
7. Drain the fruits. Increase the heat, and reduce the wine by half.
8. Pour into a serving bowl and let cool.
9. Add the cooled fruits and the rest of the orange zest. Serve.
