Coat the pork cubes with cornstarch.
In a bowl, mix the eggs, flour, baking powder, and salt, then add the pork cubes and coat them well with the mixture.
In a pan, heat the oil over high heat and add the meat, a little at a time, so that the pieces of meat do not overlap, and can brown well.
Cook for about 10 minutes, stirring often, or until the meat is golden brown on the outside and no longer pink on the inside.
Set the meat aside on a warm plate.

In a saucepan over medium-high heat, add the sesame oil, ginger, and green onions and cook for 3 minutes.
Add the water and maple syrup and simmer for 1 minute more.
Meanwhile, in a bowl, dissolve the cornstarch in the soy sauce and chili sauce, then pour this mixture into the saucepan and cook until the sauce has thickened.
Add the meat pieces and mix well to coat.
