Coat the chicken cubes with flour. Cook in peanut oil in a wok. Remove the chicken once cooked. Add a little more oil to the wok if necessary. Sauté the garlic and ginger for approximately 1 minute. Add the following in order, with a 3-second interval between each: white wine, soy sauce, brown sugar, white vinegar, and water. Return the chicken to the wok mixture. Simmer (low boil) until the sauce is caramelized. Serve with basmati rice and fresh sprouts, warmed in hot water with 1/4 cup (65 ml) of seasoned rice vinegar (optional).
