1. Preheat the oven to 300F.
2. Butter the flan mold.
3. In a bowl, beat the eggs and sugar. Add the cream and milk. Mix well. Add the crystallized ginger pieces. Mix well.
4. Pour the egg cream into the mold. Place the mold in a deep oven dish. Pour water up to half of the mold.
6. Bake for 35 minutes.
7. Remove from the oven. Let cool on a rack for 20 minutes.
8. Refrigerate for 4 hours before unmolding. Serve cold.
