1. Peel the carrots and parsnips, cut the carrots and parsnips into large sticks. Rinse and scrub the radishes. Chop the shallots.
2. Melt the butter in a deep pan. Cook the shallots for 3 minutes. Add the carrot and parsnip sticks. Cook for 1 minute. Add the broth, bring to a boil and cook for 8 minutes. Add the radishes and cook for 2 minutes over low heat. Sprinkle with sugar, cover the pan and cook for 10 minutes over low heat.
3. Remove the lid, season with salt and pepper. Turn up the heat so the juice evaporates and becomes syrupy.
4. Reduce the heat. Add the maple syrup. Stir to coat the vegetables until they caramelize slightly. Serve immediately.
