1. Peel and pit the mangos. Cut the flesh into thick strips.

2. Chop the onions with a bit of green stem.

3. In a saucepan, sauté the onions over medium heat with 1 tbsp of oil until translucent.

4. Add the mangos, sugar, apple cider vinegar, minced garlic, finely crushed cardamom seeds, and salt. Cook for 15 minutes.

5. Coat the golden fillets in a plate with flour mixed with salt and pepper. Shake off excess flour.

6. In a large skillet, heat extra virgin olive oil with butter over medium heat; add the fillets and cook for 3 minutes per side. Baste with fat several times during cooking.

7. Pour the mango sauce into a warm serving dish. Place the golden fillets on top and serve immediately.
