1. Preheat the oven to 180°C.

2. Peel the onions and place them in a baking dish. Add half a glass of broth and cover with aluminum foil. Cook for 30 minutes.

3. Meanwhile, chop the ham into small pieces and mix with the bread soaked in milk. Add the beaten eggs, chopped thyme and rosemary, and pepper.

4. When the onions are cooked, carefully hollow out the center with a small spoon. Recover this flesh and incorporate it into the ham mixture.

5. Stuff the onions with this preparation and put them back in the baking dish.

6. Dilute the maple syrup in the remaining hot broth and pour over the onions. Finish with a drizzle of extra virgin olive oil.

7. Bake and cook for 30 minutes. Serve hot with a salad.
