Preparation
1. Preheat the oven to 375°F.
2. Using a small knife, make six incisions in the veal roast. Insert a clove of garlic into each incision. Place the thyme on the roast.
3. In a roasting pan, place the veal roast, potatoes, carrots, orange zest, and turnips. Drizzle with beef broth.
4. Roast for 70 minutes. Remove from the oven and add the peas and a little more beef broth if needed (there should be enough broth to cover the pan halfway). Roast for 20 minutes or until the roast is tender.
5. Remove from the oven.
6. Serve the roast sliced with the vegetables, drizzled with cooking juices.
