NB: The lobster is cut “alive”, however, you can blanch it in a large pot of salted water.
Place the lobster on its back and cut it lengthwise with a large knife.
Add a few knobs of butter to each half, plus a bit of salt and pepper. Place in a hot oven (400°F) and cook for 12 minutes, then put under the broiler for 4 minutes. Serve hot.
