Preheat your oven to 350 F (180 C) and grease a 6×9 inch (15 cm x 23 cm) bread mold.
Line it with parchment paper, making sure to bring it up at least 3 inches (7.5 cm) over the edges.
Sift together the flour, baking soda, baking powder, and salt.
In an electric mixer, cream the butter and sugar at medium speed.
Add the eggs one at a time, beating between each addition.
Add the vanilla sugar, vanilla extract, and yogurt.
Add the banana puree, the mixture of dry ingredients, the lemon zest, the coconut flakes, and the crushed pineapple and mix gently with a wooden spoon.
Pour the preparation into the prepared bread mold and bake for 1 hour and 15 minutes, or until a knife inserted into the center comes out clean.
Remove the bread from the oven and place it on a cooling rack.
Wait until it is lukewarm to start slicing.
