Preheat the oven to 400 F (200 C) and prepare an 8-inch (20 cm) square silicone mold on a baking sheet, or if the mold is not silicone, butter and flour it.
In a bowl, beat the whole eggs with the brown sugar and vanilla sugar.
Add the flour and mix well.
Add the melted butter, ground hazelnuts, and rum and mix well. Set aside.
Beat the two egg whites with a pinch of salt until stiff, then incorporate them into the dough, in 3 parts, folding with a spatula.
Pour the preparation into the mold and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
Let cool on a rack before cutting the cake into 16 squares.
Sprinkle with powdered sugar and serve with custard or chocolate sauce.
