To make your homemade mixture, you can vary the herbs according to your desire! I propose the more classic version.
Place the chives, thyme, and parsley in the bottom of a glass jar.
Cover with coarse salt and press gently.
Then add the chopped celery leaves.
Cover with coarse salt again and press gently.
Add the onion.
Cover with coarse salt one last time and press gently.
Pour in the cold water and close the container.
Let it sit for 3 days in the refrigerator before using it.
To use as a marinade for 4 people, mix 4 tablespoons of homemade herb mixture with 125ml of vegetable oil.
Brush the meat on both sides and let it rest for 1 hour before cooking as usual.
This preserves for 10 days in the refrigerator.
