For 1.6 liters of syrup:
Day 1
Quickly rinse the strawberries in fresh water. Dry them in a cloth, remove the stems and cut them in half.
Pour the strawberries, water, sugar, and lemon juice into a large stainless steel pot.
Bring to a simmer, stirring gently. Let cool.
Collect the syrup in a bowl by pouring the preparation into a fine china cap and gently pressing the fruits with a skimmer.
Cover with a sheet of parchment paper and refrigerate overnight.
Day 2
Filter the syrup a second time through a very fine china cap, then pour it into a pot.
Bring to a boil and maintain a boil over low heat for 5 minutes.
Skim carefully.
Sterilize the bottle by plunging it into a bath of boiling water.
Keep this water in the bottle until it’s time to fill it with syrup.
Fill the bottle with syrup up to 1 cm from the top.
Close with a screw cap and turn the bottle over so that it is hermetically sealed.
