In the bowl of a stand mixer fitted with a hook, combine the flour and sugar.
In another bowl, dissolve the yeast in the lukewarm water.
Gradually pour the yeast mixture into the flour mixture and knead until a very elastic dough is formed (about 8 minutes).
Cover the bowl with plastic wrap and let it rise for 1 hour in a warm place.
Heat the oil to 350 F (180 C).
Use a spoon to drop a small amount of dough into the oil and fry the beignets, turning them until golden brown.
Remove them with a slotted spoon and let them drain on paper towels.
Heat the honey in a saucepan, then drizzle it generously over the warm beignets.
Sprinkle with confectioner’s sugar and serve very hot.
