Preparation

1. Preheat the oven to 350⁰F.
 
2. Cook the pork ribs in boiling water for 15 minutes. Drain and set aside.
 
3. In a large bowl, prepare the marinade. Mix the ketchup, brown sugar,
 
4. garlic, salt, and pepper.
 
5. Put the ribs in the marinade and refrigerate for 1 hour.
 
6. Remove from the fridge and bake for 1 hour. Baste occasionally.
 
7. Remove from the oven. Shred the meat and keep warm.
 
8. In a pot of boiling salted water, cook the noodles al dente.
 
9. In a saucepan, heat the tomato sauce, add the spinach, thyme, and oregano. Simmer for 15 minutes.
 
10. Assemble the plates: place a noodle, add the spinach in sauce and top with meat. Roll the noodle or close with a brochette pick.
 
11. Serve sprinkled with fresh basil leaves.
