Preparation

The dough:
Mix all the dry ingredients and add the yogurt.
Mix until a soft dough is obtained. It should be a bit sticky.
Cover the dough with plastic wrap and let it rest until use.

Filling:
Put all the cheese in a medium-sized bowl, pepper and mix well until the preparation is well combined.
Divide the preparation into 4 equal portions and form 4 cheese balls.

The Khachapuris:
On a floured work surface, divide the dough into 8 equal portions.
Roll out each portion into a 5″ (12.5 cm) diameter disk.
On 4 dough disks, place a cheese ball in the center, then cover with a second dough disk.
Gently press with the palm of your hand to flatten the cheese ball.
With your fingers, seal the khachapuri, pressing all around.
Roll out again with the rolling pin into a 8″ (20 cm) diameter disk.

Heat a cast-iron skillet over medium heat.
Place a khachapuri, cover with a lid and cook for 3 minutes on each side.
Cut each khachapuri into 4 and enjoy.
