1. Place the stemmed glasses in the freezer for 1 hour.

2. Using an ice cream scoop, form balls of blackcurrant sorbet and place them in the chilled glasses. Return the glasses to the freezer as soon as you’re done.

3. Let it set in the cold for an additional 1 hour.

4. Pour the wine into the frozen glasses until they are half full. Return the glasses to the freezer one last time.

5. When serving, pour a little more white wine into the glasses.
