1. Dissolve the yeast in warm water with half of the sugar. Set aside.

 

2. In a food processor, mix together the potato flakes, flour, sugar, and salt.

 

3. In this order, add the milk, melted butter, and egg.

 

4. Add the yeast mixture and mix until a firm dough forms. Let the dough rest for an hour.

 

In the meantime, prepare the caramel:

 

5. Boil the water and dissolve the sugar and cinnamon in it. Cook over low heat for 3-4 minutes to obtain a syrup. Set aside.

 

6. Cook the crepes in a non-stick pan over low heat.

Serve warm with the caramel sauce.
