4. Add the lamb pieces and cook for 5 minutes over high heat, stirring. Pour in the coconut milk and lime juice. Season with salt and bring to a boil; simmer for 45 minutes over low heat, covered.
5. To serve, distribute the meat pieces on plates. Sprinkle with chopped coriander. Serve with rice.
