Preheat the oven to 375°F.
1. Cook the pasta according to the package instructions. Meanwhile, in a large bowl, mix the cheese, eggs, spinach, parsley, oregano, salt, and pepper.
2. In a 13x9x2 inch baking dish, spread 1/2 T. of the sauce on the bottom of the dish. Place 2 t. of the mixture on each lasagna and roll. Place each rolled lasagna in the dish until it is full. Then, spread the remaining sauce over the noodles.
3. Place another layer of noodles on top and cover with the remaining sauce. Sprinkle with additional parmesan cheese, if desired.
4. Cover with aluminum foil and bake in the oven for 30 to 35 minutes, or until hot and bubbly. Remove the foil and let it brown.
5. Place the noodles on plates and surround with sauce and meat, to taste.
Serve with baked chicken breasts or shrimp.
