1. Prepare the chocolate cream. Chop 200 g of dark chocolate in a bowl; pour in the boiling cream and mix in the coffee. Let it rest for 5 minutes, then smooth the cream with a whisk. Reserve at room temperature.
2. Prepare the cake. Break the rest of the dark chocolate into pieces; pour in the boiling milk. Wait 5 minutes, then mix vigorously, incorporating the softened butter.
3. Beat the egg yolks with the sugar and vanilla. When the mixture becomes foamy and white, add the chocolate preparation.
4. Incorporate the sifted flour with the cocoa.
5. Beat the egg whites with 1 pinch of salt and gently mix everything with the previous preparation.
6. Pour into a greased mold. Bake for 40 minutes at 160°C.
7. Unmold and let cool on a plate.
8. Cut the cake in 2; pour the chocolate cream over the first half; then place the second half. Glaze with the remaining cream. Reserve in the refrigerator (do not refrigerate).
