1. Boil 1L (35 fl oz) of water with the crushed broth cubes.

2. Peel the leeks, and cut the white part leaving a bit of green. Rinse carefully. Plunge the leeks into the boiling broth and cook for 15 to 20 minutes, until tender.

3. Preheat the oven to 400°F (204°C).

4. Prepare the béchamel sauce: in a saucepan, melt the butter. Add the flour and stir vigorously with a wooden spoon. Pour in the milk, whisking, over low heat, until the sauce is smooth and creamy. Season with salt, pepper, and nutmeg.

5. Cut the ham slices in half.

6. Drain the leeks well, pressing them. Dry on a cloth. Roll the leeks two by two in the ham pieces. Arrange in a baking dish. Cover with béchamel sauce and sprinkle with grated cheese.

7. Bake in the oven to gratin, about 15 minutes. Serve immediately.
