1. Remove the green part of the leeks. Cook the white leeks in steam until tender under the point of a knife.
2. Preheat the oven to 375°F.
3. Wrap the leeks in slices of smoked ham.
4. Butter a gratin dish. Transfer the leeks into the dish.
5. In a bowl, beat the egg yolks, cream, and nutmeg. Season with salt and pepper. Pour over the leeks. Cover with grated Gruyere.
6. Bake for 20 minutes. Serve very hot.
