1. Preheat the oven to 350°F.
2. In a bowl, whisk 3 eggs, 100g of butter, and 250g of sugar into an omelette. Add the zests of 3 lemons.
3. Cook this mixture in a double boiler while constantly whisking. When the cream coats a spoon, stop cooking. Refrigerate.
4. In a robot with a flat whisk, mix 2 eggs and 150g of sugar until the mixture is pale. Add the milk and mix. Add the flour and baking powder. Add the remaining zests.
5. Butter and sugar the muffin molds. Pour the dough into the molds.
6. Bake for 15 minutes.
7. Remove from the oven and let cool completely on a rack.
8. Coat with lemon glaze and serve.
