1. In a pot, cook the lentils in the vegetable broth with the onions, about 45 minutes. Drain and let cool completely.
2. In a bowl, mix the tomato juice, chopped cucumber and diced tomatoes. Add the chopped herbs and cooked lentils. Season, pepper and mix.
3. Pour the preparation into glass cups or bowls, decorate with herbs and serve immediately.
