Ingredients
Preparation
Preheat the oven to 350 (180 C). Prepare a muffin tin with 12 cups, lining it with paper liners. Set aside.
Combine flour, baking powder, salt, sugar, and white chocolate chips in a bowl and set aside.
In a large bowl, mix together the melted butter, eggs, buttermilk, lime zest, and lime juice.
Add the wet ingredients to the dry ingredients and mix with a fork until the dry ingredients are just combined.
Fill the paper liners 2/3 full with the mixture.
Bake for 20 to 25 minutes or until the muffins are lightly golden and a toothpick inserted comes out clean.
Remove from the oven and let cool in the tin for 5 minutes before transferring the muffins to a cooling rack (this prevents the paper liners from sticking to the muffins).
Glaze:
In a bowl, mix together the powdered sugar and lime juice until smooth.
Spread the glaze over the muffins with a small spatula.
