Using a sharp knife, cut the feta into small 1/2″ (1 cm) cubes.
Then put them in a small bowl.
Cut the half lemon in half lengthwise to get 2 quarters; remove and discard the seeds.
Cut the quarters into thin slices across the width; place these slices around the feta.

Sprinkle with zaatar, hot pepper flakes, and chives.
Drizzle with olive oil. Stir very gently so as not to break the cheese pieces.
Let it rest for two hours at room temperature or cover and refrigerate for up to 2 days.

Just before serving, cover each slice of grilled bread with salad.
Top with a piece of marinated feta and grilled sesame seeds. Serve immediately.
