Preheat the oven to 200°F.

 

For the meringue:

 

1. Mix the egg whites and sugar with a whisk, then place the sugar mixture over a bain-marie and heat gently while constantly mixing.

 

2. When the sugar is dissolved in the egg whites, transfer everything to the mixer and, at medium speed, whip the meringue until the mixer bowl has cooled.

 

3. Add the food coloring and mix. The meringue is shiny and ready to use.

 

4. Pipe small, equal, and spaced dots of meringue.

 

5. Bake for a minimum of 2 hours or until the meringues are dry or the meringue forms firm peaks. Let cool to room temperature.

 

6. Melt the chocolate in a bain-marie, dip the base of the jewels into the melted chocolate, then into the rainbow candies. Let set.

 

These little treats are eaten like candies!
