Preheat the oven to 350°F.

 

1. For the meringue, mix the egg whites and sugar with a whisk.

 

2. Place the sugar and egg white mixture in a double boiler and heat gently, stirring constantly.

 

3. When the sugar has dissolved in the egg whites, transfer the mixture to a stand mixer.

 

4. At medium speed, beat the meringue until the mixer bowl has cooled. The meringue is shiny and ready to use.

 

5. Transfer the meringue to a piping bag with a round tip and pipe small, pointed drops for the wings and S-shapes for the heads.

 

6. Bake in a preheated oven at 150°F until the meringues are dry, about 4 hours.

 

7. To assemble, draw a design on the plate with the fruit coulis.

 

8. Decorate with sliced strawberries, mix the whipped cream with the food coloring, and fill a piping bag with a star tip.

 

9. Create the swan bodies by forming a beautiful rosette of whipped cream, add the wings on either side, and finally attach the head to the body.
