1. Preheat the oven to 350°F.

2. Cook the pork ribs in boiling water for 15 minutes. Drain and set aside.

3. In a large bowl, prepare the marinade by mixing the ketchup, honey, chipotle, garlic, cumin, paprika, salt, and pepper.

4. Place the ribs in the marinade and refrigerate for 1 hour.

5. Remove from the refrigerator and bake for 1 hour, basting occasionally.

6. In a large bowl, mix the black beans, corn, shallots, coriander, and bell pepper.

7. In a small bowl, mix the oil, lime juice, and zest. Add this mixture to the first and mix well.

8. Remove the ribs from the oven and serve warm.
