In a pot, heat 2 tbsp of oil. Add the chopped onions and garlic. Cover and cook for 4 minutes over medium heat.
Add the rice and brown for 2 minutes. Add the broth and chopped pepper. Cover. Simmer for 20 minutes over low heat.
In a pan, heat the remaining oil. Add the shrimp and cook for 4 minutes. Add the paprika, cumin, and coriander. Mix.
Remove the shrimp. Set aside.
Add the sliced mushrooms; cook for 2 minutes. Return the shrimp to the pan and cook for 4 minutes.
Serve the shrimp over the spicy rice.
