1. Mix all ingredients, except chicken and oil, in a 4-cup resealable plastic bag.
2. Mix chicken and oil. Shake about 6 pieces of chicken at a time in the bag to coat well. Shake off excess.
3. Place chicken pieces in a single layer on a microwave-safe rack in a microwave-safe dish. Cover with wax paper.
4. Cook on high in the microwave for 3 minutes. Turn the dish half a turn. Cook for 4 to 5 minutes more or until the chicken loses its pink color in the center.
