Preheat the oven to 400 degrees. Spread the mushrooms on a large tray and sprinkle with onions, garlic and thyme. Top the mushrooms with slices of Taleggio cheese. Mix the breadcrumbs and parsley and sprinkle over the mushrooms. Cook for 15 to 20 minutes in the preheated oven until the breadcrumbs are golden and the mushrooms are cooked. Meanwhile, dress the arugula with lemon juice and a little olive oil. Serve the mushrooms on the arugula. They can also be served on a grilled ciabatta bread.
