1. Preheat the oven to 200°C.
2. Butter 4 large tartelette molds. Roll out the pastry and cut into 4 disks. Line the molds and prick the bottoms with a fork. Cover with parchment paper and dried beans. Bake for 15 minutes. Remove from the oven; remove the beans and parchment paper.
3. Scrub, debeard, and rinse the mussels. Put the mussels and wine in a saucepan; season with pepper. Cover the saucepan and let the mussels open, shaking occasionally. As soon as they are open, remove with a slotted spoon and drain in a colander.
4. Strain the mussel juice; reduce by three quarters. Shell the mussels.
5. In a bowl, mix the cream, egg yolks, and reduced mussel juice. Season lightly with salt and pepper.
6. Fill the tartelettes with mussels and shrimp. Pour the sauce over and sprinkle with grated Gruyère. Bake and cook for 15 minutes.
7. Remove from the oven. Let the tartelettes rest for 5 minutes before unmolding. Serve very hot.
