Put the sugar, yeast, and water in a bowl and let it rest for 5 minutes. Mix the flour and salt in a bowl, add the olive oil and the yeast mixture. Knead for about 10 minutes. Add, if necessary, a little flour or a few drops of warm water until you get a flexible, non-sticky dough. Cover and refrigerate for as long as possible. Preheat the oven to 475°F. Spread a little tomato sauce on each disk. Then, distribute the sliced mozzarella. Place 4-5 anchovy fillets on each pizza.
Place a few black olives. Sprinkle the pizzas with a little oregano.
Season with salt and pepper. Drizzle each pizza with a small stream of olive oil. Put the pizzas in the oven. Cook for 15 minutes.
