In a large pot of boiling salted water, cook the noodles for about 3 minutes,
Rinse them with cold water and drain. Set aside.

Add the prawns and continue cooking for an additional 3 minutes.
Add the onion and bell pepper, garlic, ginger, lemongrass, and red chili.
Add the curry powder. Continue cooking while frequently stirring.
Add the noodles. Cook for 1 minute, then pour in the soy sauce mixture.
Pour in water and cook everything for 5 minutes.
Add the peanut sauce and spinach leaves.
Serve hot!
