1. Preheat the oven to 385°F.
2. Peel the potatoes. Cut in half lengthwise. Make incisions in each potato half, almost to the base, without cutting them completely.
3. Melt half of the butter in a gratin dish. Place the potato halves in the dish.
4. In a bowl, mix the parmesan and breadcrumbs. Sprinkle this mixture over the potatoes.
5. Melt the remaining butter. Drizzle the melted butter over the potatoes.
6. Bake for 30 minutes. Remove from the oven and serve hot.
