1. Rinse and drain the broccoli florets. Set aside. Peel and chop the thick stems. Peel and finely chop the garlic.
2. In a large saucepan, melt 20 g (0.7 oz) of butter. Add the chopped broccoli stems and garlic, as well as the crumbled chili pepper. Cover and cook for 10 minutes over low heat.
3. In a large quantity of boiling salted water, cook the pasta until al dente. Add the broccoli florets 3 minutes before the end of the pasta cooking time.
4. Drain the pasta and broccoli, reserving 1/2 cup (4.22 fl oz) of the cooking water. Add the pasta and broccoli to the saucepan. Season with salt and pepper. Mix for 1 minute over low heat. Incorporate the remaining butter and parmesan. Mix and serve.
