Cut the bell pepper in half, remove the stem and seeds.
Heat the oven grill and roast the red bell pepper until it’s well charred.
Place in a bowl and cover with plastic wrap. Let cool.
Remove the skin and finely chop the bell pepper, place it in a medium bowl.
Combine the peaches, tomatoes, garlic, vinegar, and basil.
Season with salt and pepper to taste.
Marinate for 30 minutes before serving or cover and refrigerate for up to 8 hours.
Before serving, bring the mixture to room temperature. Lightly grill the baguette slices on both sides. Spread the mixture with a spoon over the slices.
Note: To peel the peaches, make a cross-shaped incision at the base, then plunge them into boiling water for 1 minute, then cool in cold water.
